"AVOCADO" as soon as you hear the name you think of Mexican cuisine or the second thought is Guacamole .
Yes !!! me too. But to like it more and to own it into our taste and cook it more often you always need more ways to make it tasty. Avocado in itself has no taste of its own, it is a bland tasting fruit but there's not everybody who relish it... well it's their story.
I got introduced to Avocado after coming to USA. We had visited my sister-in-law's friend's place during their visit to us soon after coming to USA, the friend's wife had prepared fresh hot quesadillas, chips, salsa and guacamole, a complete Mexican treat. I liked the taste of it tasting it for the first time. Then subsequently sited Avocado in local grocery stores too some hard dark green colored weird looking stuff not knowing how to cook it, as i had never heard of Avocado before when in India. Believe me with new places you even get to know a variety of local food you haven't seen in your lifetime. I started researching about it through internet and saw you tube videos about different ways to use it.
I experimented it in a variety of ways in my kitchen, made guacamole, avocado smoothie, avocado ice cream, avocado roti's / paratha's, and the most favorite liked recipe of them all is paneer avocado sandwich with my indian twist and who doesn't like sandwiches? You will find ample of Avocado sandwich recipes online but none like this. These are a hit among all my family and friends, and the lucky ones who got a chance to taste it and also the anti-Avocado one's too. It is a hit among kids too, making it an excellent tiffin recipe, snack recipe or anytime recipe.
INGREDIENTS
for the filling -
2 ripe avocado
1/2 bell pepper finely chopped
1 onion finely chopped
Panner (grated or crumbled form) same Quantity as of the Avocado
1/2 tsp garlic, ginger, chilli paste
1/2 tsp black pepper powder
1/2 lemon juice
salt
any grated cheese (optional if you like - kids love it )
- bread slices (i prefer multigrain or whole wheat or cracked wheat bread as it tastes better than normal white bread)
- sriracha hot chili sauce OR any tomato ketchup of your choice
- green cliantro chutney homemade
- Ghee OR olive oil OR butter
(i used amul butter here as it departs a nice salty crisp taste when toasted OR any other of these mentioned for a change in flavor)
- hot and sweet tomato ketchup
- nonstick pan OR iron skillet OR sandwich maker / sandwich grill
(i used to make it in sandwich toaster earlier but i like the crisp crunch when pan toasted OR grilled)

Note : Bread , Avocado and Panner, salt are the main ingredients here; you can tweek or vary any other ingrediants as per your taste preference and ingredient availability.
PROCEDURE
Step 1 : Cut and deseed the ripe avocado, mash it with the back of the spoon.
Step 2 : Mix all the ingredients for the filling into a bowl. Taste it to check for salt and spices.
Step 3 : Take bread slices, spread evenly sriracha hot chili sauce OR any tomato ketchup you like on one slice and green cliantro chutney on another slice, take the filling mix and spread it on one layer, cover the other layer to close the sandwich. Make sufficient sandwiches in the same manner.
Step 4 : Heat a nonstick pan OR iron skillet, grease it generously with Ghee OR olive oil OR amul butter, keep the prepared sandwich to toast, at this time turn the flame to medium low to toast the sandwiches till crisp on one side, see doneness when slightly brown, apply butter again then turn accordingly on another side till brown and crisp.
Note : You can even use a Sandwich grill OR a Sandwich maker OR a Sandwich press for this same recipe.

Step 5 : Paneer Avocado Sandwich is toasted evenly on both sides ready to be cut in desired shape as you may like.
FINAL PLATING
Serve hot. Crisp and hot Panner Avocado Sandwiches are ready to munch on, we love to have it for dinner with Maggi hot and sweet tomato ketchup and green cilantro chutney. But if you love it, you can have it any time.
I especially love pan roasted sandwich as it is crispy from outside and the paneer avocado filling just melts into your mouth along with some crisp from the vegetables and the applied sauces too impart a tasty flavor.
